"Edda" Bianco Igp Salento 2023 75 cl San Marzano Vini

FSM EDD

From the silver sea of olive trees, the white stones at noon, the bright secrets woven into lace, and languidly inviting Baroque palaces, comes Edda, a “female” wine, with a mineral, timeless temperament, an ineffable fruit in a land of charm.

Vine variety: Predominantly Chardonnay with native white grape varieties.

Area: San Marzano, Salento, Puglia. At about 100 meters above sea level.

Soil: Shallow, with medium-fine texture.

Farming type: Guyot (4,500 vines per hectare).

Grape harvest: Middle ten dqays of August.

Vinification: The grapes are destemmed and left in cryomaceration for a few hours. The next phase is the gentle pressing of the marc followed by static cold decanting so that it happens naturally. The alcoholic fermentation takes place in French oak barriques.

Ageing: On yeasts in French oak barriques for 4 months, with weekly bâtonnage.

Tasting notes: Straw yellow colour with golden reflections; mellow citrus fruits and delicate vanilla floral notes fill the nose; to the taste it is generous in its elegance, fresh, delicate and mineral.

Best served with: Starters, first courses with fish, cheese.

Serving temperature: 12-14 °C
