Origin Sovana DOC Superiore
Grapes 100% Aleatico
Vinification The grapes grown in the vineyards of the Aldobrandesca estate were picked when very ripe with a high sugar content. Some of them were fermented immediately while the rest were set aside for drying which lasted for about thirty days. This enabled us to obtain a structured, more concentrated and complex wine. The two batches of grapes were fermented according to the same process. Destemming and soft crushing were followed by maceration at a low temperature (about 5°C) for four days, in order to extract all the grapesÂÂ aromas and obtain a must with rich colour but without astringency. After removal of the skins the must underwent alcoholic fermentation at a temperature of 18°C which was then blocked by drastic cooling (up to 0°C) when it still contained a certain quantity of sugar. The wine thus obtained was kept at a low temperature until bottling.
