The grape of Sabato "Saturday" (or uve 'e sabete, as the local lexicon dictates) is an absolutely indigenous variety of the Sorrento Peninsula, like the almost disappeared Sant'Anna and Cornaiola. It is a clone of Aglianico which perhaps owes its name to its tardiness, as maturing in the sixth period according to the Romans, it is linked to the sixth day of the week.

The dense and hardly penetrable Ruby of young wines tends towards the garnet of more distant vintages, as the classic lively fruity yields over time to more complex aromas. In the mouth it is rich but maintains the freshness and noble tannins of the vine with good accompanying skills both with pasta and hot soups, with meats, and finally with the classic caprese salad, as long as it is fresh.

Vinification: Fermentation at low temperature in stainless steel tanks, subsequent storage of the wine in tanks for 4-5 months.
