Ageing: About 12 months in French barriques of medium toast.

Organoleptic test: Ruby red. Vinous, with hints of red fruit, little plant. Taste fresh and soft, spicy, with good structure and persistence in the mouth. Mild astringent tannins.

Gastronomic combinations: The perfect combination for vegetables and meat dishes, as the Neapolitan sauce and bolognese. Excellent with meat dishes.

The origins The first testimony of the variety Sirica (or Siriana or Syricus) are literary and date back to Pliny (NH,XIV,41-51) in 75 B.C. It was included among the grapes grown in Campania during Roman times; its attributed name deriving from syricum, a red dye widespread in those days. Isidoro of Seville in 63 A.D. (O.XVII,5-28) also called the grape “Vitis Sciovia”(derived from Syria) and in accordance with Pliny, clamining it among the most prestigious (varieties) among the Aminee. Catone (DE AGR 106) specifies that the introduction of this variety into Italy occurred many years before the founding of the city of Rome from a region inhabited by the Seri. More recently, it has been hypothesized that the origin of the name Sirica derives from Siri, an ancient city post on the Jonio, near Metaponto, where after the Second Punic War, with the control of Rome on Magnia Grecia, was called Eraclea. Due in part to some French authors (Andrè,1953 e Rezéau,1998), it has been proposed as a semantic affinity with Syrah, Serine and Shesh, varieties of distant Dalmatian origin. The genetic relationship with other varieties The research conducted on the behalf of Azienda Feudi di San Gregorio about the last four original plants still present in Taurasi, using the markers of DNA and the profile of antocyanins, is that it evidently has a certain affinity with other varieties of north-east Italy, such as Teroldego, Lagrein and Refosco, linked to the colonization of the Po delta. The parental relationship with Aglianico speculates that Sirica is an ancestor of this vine, an expression of Etruscan viticulture, from an enclave of Capua that had been propogated by the Longbards, that had demonstrated the training system of Avellino and Benevento (le tennecchie o tesole) as in Irpinia. The monumental vines of Taurasi The volcanic high plains of Taurasi conserve for its characteristics, the cultural and pedo-climatic conditions, a viticulture that calls to mind very ancient and original genetic structures. Among the many varieties still present from centuries past, include some strains of Sirica of an age presumed to be 250-280 years, of French roots, of a vegetative and productive development.
